Because Good Vibes and Granola Come in Clusters!

If you’re anything like me, you probably love granola. It’s crunchy, it’s versatile, and it’s almost too easy to snack on. But there’s this unique twist on granola that’s been floating around in my foodie friend group: buckwheat granola. It sounds fancy, but it’s simply a mix of oats (sometimes) and raw buckwheat groats. Remember, it’s got to be raw, not toasted, because both are available and they definitely aren’t the same!
I’ve been inspired by this trend and thought, why not create my own version? I wanted something that nods to familiar granola flavors but also brings in the magic that buckwheat can offer. It’s a slight tweak, yet it captures the essence of what granola is all about.
To get started, grab some Bob’s Red Mill Organic Old Fashioned Rolled Oat and Anthony’s Organic Buckwheat Groats. Combine these two for the base. Then, introduce a cup of unsweetened shredded coconut. Trust me, Let’s Do Organic Shredded, Unsweetened Coconut adds a delightful stickiness and toastiness that elevates the entire blend.
Personally, I adore rich and fatty granolas, so coconut is non-negotiable for me. It makes for a clumpy mix, which is exactly what we want in this scenario. Add to this a cup of nuts—pick your favorites! I went with pecans, walnuts, and Terrasoul Superfoods Organic Pumpkin Seeds (Pepitas). Honestly, pepitas hold a special place in my heart when it comes to granola.
Seeds also play a key role in my granola mix. I added Spectrum Essentials Organic Ground Premium Flaxseed and Manitoba Harvest Hemp Hearts. Sesame seeds are another favorite, bringing that nutty richness to the party. Feel free to change it up with chia seeds or whatever excites your palate.
Now, any great granola needs a fat. Nutiva Organic Coconut Oil is my preferred choice. If you’re on the fence about coconut oil, don’t worry, butter’s got your back. Buttery granolas have a certain charm, though if you’re aiming for something on the plant-based side, stick with coconut oil or even olive oil.
Here’s where it gets sweet—literally. Heat that coconut oil up with some honey. I’ve also tried using 365 by Whole Foods Market Maple Syrup and it’s equally satisfying. Want that extra crunch? Throw in some Wholesome Sweeteners Fair Trade Turbinado Raw Cane Sugar. Alternatively, Big Tree Farms Organic Coconut Sugar offers that lovely brown sugar vibe without being too refined.
Throw in a pinch of salt to balance all that sweetness. Redmond Real Salt’s Ancient Fine Sea Salt is my go-to, adding subtle depth to the granola. Heat this sweet mixture, then pour it over your oat, seed, and nut combo.
For those dreamy clusters, a beaten egg white does wonders. It creates those delightful nuggets we love so much in a granola mix. Just a heads-up for my vegan friends: you can totally skip the egg.
Now, on to the oven. Set it at 300°F. Spread your concoction evenly on a baking sheet and let it bake for about 20 minutes. After the initial bake, stir a bit and toss it back in for another 10-15 minutes until you achieve that perfect golden-brown hue. Some prefer theirs lighter, but I’m all about that deeper, rich color.
Once it’s out of the oven, resist the urge to touch it. Let it cool completely in the pan. While it’s cooling, sprinkle in some dried fruit. I like a mix of Sun-Maid California Raisins, TerraSoul Orchards Dried Cherries, and Viva Naturals Organic Goji Berries. The residual heat softens the fruit without making it tough and chewy.
Post-cooling, break apart that granola into sizable clusters. The key is patience—letting it cool undisturbed ensures those magnificent clumps remain intact. One bite, and you’ll understand why it’s worth the wait!
For a flavor boost, consider adding spices. Some days, it’s a dash of cinnamon, other times it gets a hit of Simply Organic Turmeric or McCormick Gourmet Organic Cardamom. If you’re a pumpkin spice fan, sprinkle in some Trader Joe’s Pumpkin Pie Spice.
This buckwheat-driven granola doesn’t aim for bold flavors. Instead, it boasts a fantastic texture, delivering a crispy, nutty experience reminiscent of your favorite nuts. Perfect for breakfast or snacks, it quickly became my go-to morning treat and a favorite in my neighbor’s home as well.
Sharing is caring, right? Though I consume plenty myself, there’s always enough to go around. And with buckwheat and gluten-free oats, you can whip up a gluten-free batch, accommodating all dietary needs.
So who gets to enjoy this delightful treat? Well, family and friends often find themselves lucky recipients. Whether shared with a neighbor or prepared for a loved one’s visit, this granola is a surefire hit. It’s a week-long delight, often served to visitors and enjoyed by many.
In the end, the beauty of homemade granola lies in its flexibility. Mix, match, and create a version that suits you. And always keep in mind: a good granola is more than food—it’s a comforting ritual that brings us closer to the ones we cherish. Whether for breakfast or a delightful snack, this granola stands ready to charm you with every crunchy bite!
