Fiber Isn’t Thrilling But The Results Are Kinda Insane

Okay so I’m gonna sound insane but just stay with me.

I was like, running on empty for months. Months. And I didn’t even realize it because that was just my baseline, you know? I’d wake up tired. I’d hit 2 PM and just… stop existing. My brain would go all fuzzy and I couldn’t remember why I walked into a room and honestly I thought that was just what being an adult was? Like, that’s just the deal. We all drag ourselves through our days pretending this is normal.

Except it’s not normal. At all.

And I know this sounds stupid because I’m literally about to tell you that fiber fixed my life. Fiber. Like something a 74-year-old would get excited about. But here’s the thing, I’m not exaggerating. This is genuinely wild.

So like, my gut was basically on strike. And I had no idea. I just thought I was broken.

Then I actually started eating vegetables and my brain turned back on.

I’m not even joking. Three weeks of giving a shit about what I was eating, not like, restrictive nightmare stuff, just actually choosing things, and suddenly I was sleeping better. My skin cleared up. That brain fog lifted and I could actually think again. I remembered things. Multiple things. In sequence.

Your gut basically runs everything. Your energy, your mood, your ability to not want to stab people at work, it’s all gut stuff. And we’re all just feeding ours the worst possible things then wondering why we feel like garbage.

So here’s my whole thing with vegetables:

They taste bad if you treat them like punishment. That’s rule number one. Steamed broccoli is sad. Sad broccoli lives in the trash. But broccoli that’s like, actually roasted with salt and maybe some garlic? Where the edges get crispy and a little burnt? That’s different. That tastes good. That’s something you’d actually eat.

I literally bought an Instant Vortex Plus Air Fryer because I kept telling myself I’d roast vegetables and then I’d just… not. It felt like too much effort. But an air fryer? Five minutes. Done. Crispy edges. Like, genuinely delicious.

Brussels sprouts get this caramelized thing going on. Sweet potatoes come out perfectly soft inside and slightly crispy outside. And the weird part is you end up just like, snacking on them? Not even as part of a meal. Just eating roasted vegetables like they’re chips. It’s bizarre.

Cherry tomatoes get all wrinkled and concentrate into this surprisingly sweet thing. Snap peas get this snappy quality, sorry, bad pun, where they’re still kind of crunchy but also warm. It’s genuinely good food.

And like, I used to be the person who would eat salad for like, two days, get bored out of my mind, and then go back to drive-thru because at least that tasted like something. Salad didn’t feel like a treat. It felt like eating yard clippings.

The actual game changer was treating salad like it mattered.

Not like, difficult fancy salad. Just… making sure the greens aren’t soggy? Sounds dumb but I grabbed a OXO Salad Spinner because if you’re eating wet sad spinach straight from the bag, you’re not going to eat it consistently. But if it’s actually dry and crispy and fresh? You’ll eat it. I have no idea why this matters so much but it actually does.

Throw on some of those roasted vegetables. Add like, some beans or chickpeas or something. Actually dress it with oil and vinegar instead of dumping ranch on it. And suddenly you’re eating something that’s like, legitimately good. You’re not suffering through it.

Then there’s the smoothie thing which I know sounds annoying but hear me out:

I’m not talking about those Instagram smoothie bowls with like 47 toppings and $23 ingredients. I’m talking about just like, throwing berries and spinach and honestly whatever fiber-heavy fruit is in the fridge into a blender with some milk or water, and suddenly you have something that tastes like you’re cheating on your diet except you’re just eating healthy food.

I got a Ninja Blender because my old blender was basically a toy and would leave chunks of sadness in everything. But a real blender? It makes things actually smooth. Creamy. Like a milkshake but it’s raspberries and spinach and you feel like you’re treating yourself instead of like you’re doing penance.

Raspberries are insane for fiber. Like, criminally high fiber for how small they are. One cup and you’re basically done for the fiber day. And they’re expensive enough that your brain is like “this is a treat” which makes you actually excited to eat them instead of like, forcing yourself.

Pears are the other one people sleep on. They’re sweet. They’re portable. They have like six grams of fiber just hanging out in that one piece of fruit. And you keep the skin on because that’s literally where all the good stuff is.

But here’s the real truth:

Nobody sticks with vegetables if they taste like punishment. And we’re all just eating the bare minimum because we think that’s what health is supposed to be. Sad, boring, requiring willpower.

It’s not. It’s just… you have to actually cook things. You have to care a little bit. Use tools that make it easy instead of a nightmare. Season stuff. Try texture. Make it taste good.

When that happens? You just like, eat vegetables now. It’s not a thing you’re doing on purpose. You’re just doing it because the food tastes good and then oh cool, your gut’s also happy and your energy’s back and you’re not losing your mind anymore.

So like, genuinely, try it. Not like, judge yourself if you fail or anything. Just grab some things that are actually easy to cook. Roast them. Make them taste good. See what happens.

Your body is kinda screaming for this and you’re just like, ignoring it with processed garbage.
